Dehydrated Duck Jerky | High Prairie Kitchen

After a couple good days of duck and goose hunting, Matt is making some jerky on the dehydrator. The recipe is down below. Enjoy.

2.5 - 3 lbs duck or goose meat
2 cups water
1/2 cup worcestershire sauce
2 1/2 Tbsp kosher salt
3 1/2 Tbsp brown sugar
1/2 Tbsp cayenne pepper
2 tsp garlic powder
2 tsp black pepper
2 Tbsp Liquid Smoke
1 tsp onion powder

Partially freeze meat for easier cutting. Cut in 1/4" strips. Mix ingredients together for marinade. Pour marinade over meat and refrigerate for 24 - 48 hours. Place on dehydrator and set temperature to 130 degrees F. Dehydrate for 10 -12 hours or until done.
