Quick & Easy Green Mango Pickle (Fiji Indian Style)

Ingredients:

• 6 Green Mangoes (Washed & Dried)
• 1 Cup Raw Sugar
• 2 Tbsp White Vinegar
• 1/2 Cup Oil
• 1/2 Cup Ready Pickle Mix
• 1 Tbsp Turmeric
• 1/4 Cup salt

Method:

1) Place your chopping board on top of a folded tea towel to stop it from moving.
2) Take one mango at a time, cut the stem side off and cut it in half. Remove the seeds, cut it in half again and then into quarters and put them in a dish. Repeat this process with the remaining mangoes.
3) Cover up the pickle mix and the oil and put it aside.
4) Take the cut mango pieces, add salt, turmeric, vinegar, sugar and mix it well. Cover it and let it rest overnight.
5) In the morning , give the mangoes a good mix , put the lid back on, drain all the liquid into another dish and throw the liquid out.
6) There will be sugar crystals still sitting at the bottom, so mix it again and put it out in the sun to dry for 3 hours giving it a mix every now and then.
7) After 3 hours, bring the mangoes inside and its time to get the pickle ready.
8) Take your pickle masala and add it to the mangoes and mix it well . You can also add extra 1/2 to 1 cup of sugar now if you want sweet mango pickle. Put this aside while we get the oil ready.
9) Take a non - stick pan, put it on medium heat, add oil and heat it. When the oil gets hot, turn the heat off and add it to the mango pickle and mix it well to combine.
10) Green mango pickle is ready and you can serve it with your favourite curry.
11) Enjoy.
