Topai, a polynesian dish that has many different names to it through out the South Pacific. From the friendly islands of Tonga, we call it Topai. My grandma would whip up these sort of dessert every once in awhile, and the taste of the coconut milk always made me wanting more. A simple and easy dish to make. Hope you all enjoy! Malo


Ingredients

Coconut milk

1 can coconut milk ( save 1/3 cup milk for later use)
2 1/2 cup water
1/3 cup sugar

Dumpling

1 cup flour
1/3 cup coconut milk (from earlier)
Pinch of salt
1 1/2 teaspoon baking powder
1/4 teaspoon baking soda
1 teaspoon vanilla extract
