This video demonstrates a few different things. How to remove the fat and silver skin from the loin. Cutting a boneless pork chop. Cutting/making a pocket in a pork chop for stuffing it. Pounding escalope’s between plastic wrap and cutting a cutlet. The trimming and cleaning of a pork loin also provides meat scraps for making stocks. If you are a regular pork consumer I recommend buying the whole boneless loin and breaking it down yourself. I also recommend that you buy these at Sam’s Club, Restaurant Depot, Costco etc… to further your savings. Once the pork loin is broken down into your desired pieces it can then be frozen until you’re ready to prepare it. This video is a good basic lesson in saving money and improving your meat cutting skills and efficiency.
