Phyllo fail? Sort of. The pastry was chef’s kiss perfection—so flaky, and golden. 🥐✨ But the mozzarella? Let’s just say it decided to take a field trip… straight to the bottom of the pan. 🫠

At least thyme was on my side, and the flavors were still 🔥 Lesson learned: next time, mozzarella gets a tighter security detail. 😉 Share your fails in the comments!

Heres a recipe for my Phyllo Ricotta triangles (not shown in the video - these were a resounding success!!

Sourdough Discard Phyllo Ricotta Triangles🥟
Okay, so there’s no emoji for, like, spanakopita… hence the dumpling. BUT, the good news is that I officially have a DELICIOUS recipe for phyllo pastry using sourdough discard. I actually used peaked starter that had been refrigerated for a day, and it worked perfectly!

Phyllo Ricotta Triangles
Dough:
175g AP flour
4g salt
3g baking powder
11g olive oil
5g vinegar
95g sourdough discard
65g water

Cornstarch mixture:
60g cornstarch
30g AP flour

Spread:
85g melted butter
55g honey

Filling:
300g ricotta
1/4 tsp salt
55g honey
Leaves from 4-5 sprigs of thyme

1. mix all dough ingredients together until cohesive. Knead for 10-15 minutes until dough is smooth and pliable. Rest for 1hr (at room temp) or up to 24hrs (in fridge).
2. Divide into 12 equal portions and shape into balls. Let rest for 1hr at room temp.
3. Combine cornstarch and flour.
4. Dip one ball into cornstarch mixture and roll out dough into 5” x 6” rectangles (apply more cornstarch mixture to avoid sticking. Cover with tea towel to avoid drying out). Repeat for the rest of the balls, stacking the rectangles and ensuring a layer of cornstarch mixture is applied between each sheet. Let rest 1hr.
5. Roll out stacked sheets to 9” x 12”.
6. Mix ingredients of spread (butter and honey) until cohesive. In a separate bowl, mix filling ingredients (ricotta, honey, salt, thyme) until cohesive.
7. Preheat oven to 335F. Gently separate one sheet from the stack, ensuring not to tear the dough. Lay sheet flat and, using pastry brush, apply the spread to the first layer. Place another sheet on top, and apply spread using pastry brush. Cut into 4 columns (from long side of dough). Apply a spoonful of the filling on one end and roll up (as in video) so that a triangle is formed. Repeat with the rest of the sheets.
8. Bake for 30-40 minutes or until triangles are golden brown.
