Easy Breakfast Muffins
Yields: 5 muffins
Equipment: Muffin pan

Ingredients:

1 1/2 cups all-purpose flour
1/2 cup sugar
2 teaspoons baking powder
1/2 teaspoon fine salt
1 large egg
1/2 cup milk
1/4 cup canola oil or plain oil
1 teaspoon vanilla extract
Instructions:

Preheat oven: Set your oven to 400°F (200°C). If using a fan-assisted oven, set it to 365°F (185°C).
Combine dry ingredients: In a medium bowl, whisk together flour, baking powder, sugar, and salt.
Combine wet ingredients: In a separate bowl, whisk together oil, egg, milk, and vanilla extract.
Combine wet and dry ingredients: Pour the wet ingredients into the dry ingredients. Gently combine using a fork until just combined. Be careful not to overmix.
Fill muffin cups: Scoop the batter into muffin cups, filling them about 2/3 full.
Bake: Place the muffin pan in the preheated oven and bake for 18 minutes.
Cool: Let the muffins cool in the pan for 10 minutes, then cover them with a clean towel to prevent them from drying out.
