Today, we have a delightful recipe for you that combines the rich flavours of Achaari Paneer Stick with the refreshing goodness of Heritage curd. Get ready for a taste sensation that will leave you craving for more!

Ingredients:
o 250 grams Heritage paneer (Indian cottage cheese), cut into sticks
o 1 cup Heritage thick curd
o 2 tablespoons gram flour (besan)
o 2 tablespoons rice flour
o 1 tablespoon ginger-garlic paste
o 1 tablespoon red chili powder
o 1 teaspoon turmeric powder
o 1 teaspoon cumin powder
o 1 teaspoon fennel seeds (saunf)
o 1 teaspoon mustard seeds
o 1 teaspoon nigella seeds (kalonji)
o 1 teaspoon fenugreek seeds (methi)
o 2 tablespoons lemon juice
o Salt to taste
o Oil for frying
For Garnish:
o Fresh coriander leaves, chopped
o Chaat masala (optional)
Instructions:
1. In a mixing bowl, combine the gram flour, rice flour, ginger-garlic paste, red chili powder, turmeric powder, cumin powder, and salt. Mix well.
2. In a small pan, heat some oil and add the mustard seeds, fennel seeds, nigella seeds, and fenugreek seeds. Sauté them until they crackle and release their aroma.
3. Add the sautéed seeds to the mixing bowl. Mix everything well.
4. Add the lemon juice and whisked curd to the bowl. Mix again to make a thick marinade.
5. Dip each paneer stick into the marinade, ensuring it is well coated. Let it marinate for about 30 minutes.
6. Heat oil for frying in a deep pan or kadai over medium heat.
7. Once the oil is hot, carefully drop in the marinated paneer sticks one by one. Fry them until they turn golden brown and crispy on all sides.
8. Remove the fried paneer sticks from the oil and place them on absorbent paper to remove excess oil.

9. Serve the Achaari Paneer Sticks hot with a side of thick curd. You can add a pinch of salt and a sprinkle of chaat masala to the curd for extra flavor.
10. Garnish the paneer sticks with fresh coriander leaves.
