This easy Pasta with Mussels in Marinara Sauce recipe is fast, and delicious!

Ingredients: yield 4 servings
2 pounds mussels, rinsed,
scrubbed and beards removed
12 oz fettuccine or other pasta of your choice
1/2 cup tomato sauce (cooked or raw)
4 garlic cloves; 2 crushed, 2 minced
1small onion finely chopped
2 tablespoons olive oil
1/4 cup white wine
pinch red pepper flakes
1 sprig fresh thyme or marjoram (optional)
salt and pepper to taste
1/4 cup of chopped parsley
Instructions:
Rinse, scrub, and clean your mussels and set aside.
Bring a large pot of water to a boil add salt and cook the pasta al dente or according to the package directions (Cook your pasta until 1-2 minutes under al dente) While your pasta is cooking,
Heat up a large pot or pan on medium heat and
drizzle in a tablespoon of olive oil.
Add in 2 cloves of crushed garlic, and let that bloom for a few minutes.
Next, add in your washed and dried mussels and cover the pot with a lid, and steam until your mussels until open, about 4-6 minutes.
Once done take off heat and let cool.
After about 5-6 minutes, take the mussels off the heat, uncover, and let cool. Once the mussels are cool to the touch, deshell them and leave few on half shell
Reserve the liquid by straining it back into the mussels with cheesecloth.
In a pan over medium heat add a tablespoon of olive oil, the chopped onion, minced garlic,
and and a pinch of red pepper flakes.
Cook stirring, just until fragrant, about 2-4 minutes.
Add the tomatoes, and let cook for about 2-4 minutes longer
stirring often until tomatoes have cooked.
(If you like your mussels sauce a bit more red, add 2-3 tbsp of tomato sauce)
Add 1/4 cup of the mussels broth, stir together and bring to a simmer.
Taste and add salt and pepper as needed. Add the mussels, shelled and unshelled,
into sauce, cover and turn heat to very low or remove from heat
if the pasta is not ready. keep warm.
Once the pasta is cooked, strain 1-2 minutes before cooking directions
(reserve a cup of cooking pasta water),
add the pasta to the sauce and let simmer for one or two minutes.
(Add a splash of pasta water if sauce is a bit thick)Toss to combine.
Remove from heat, add in the fresh chopped parsley and give one more toss.
Serve right away.
