In today’s video I show you step by step how to make this delicious, simple chicken ramen recipe from modernhoney.com that I modified to be completely gluten free! The ingredients are basic pantry items that you probably already have on hand, or might need to pick up a few things from the store halfway through cooking like I did 🤦🏼‍♀️

Ingredients:
(Broth)
-1/2 white onion
-2 cloves garlic
-2 carrots diced
-grated ginger to taste
-cilantro to taste for garnish
-green onion to taste for garnish
-4 cups vegetable broth or chicken broth
-garlic chili oil (store bought or make it at home with sesame oil, fish sauce, garlic, and dried/fresh red peppers or red pepper flakes)
-chicken (any part you just need 2 cups worth)
-1/4 cup gluten free tamari soy sauce
-gluten free ramen of choice

1. Begin by placing 4 chicken drumsticks in a large stock pot and fill with water until chicken is covered. Bring to a low boil and cook for 5-7 minutes. Remove from heat and let sit in hot water covered for 15 minutes.

2. While boiling your chicken, begin mincing your garlic, and dicing the onion and carrots. Heat a large size saucepan on medium-high heat with 1TBsp olive oil and add onion and carrots. Cook until onions become translucent and soft, about 5-7 mins. Add garlic, stirring frequently so nothing burns. Grate in ginger at this time, a little at a time until you reach the amount you want. (Usually 1-2tsp worth and no you don’t have to peel it!!)

3. Once the aromatics have cooked down and smell super yummy, pour in the 32 oz carton of vegetable stock and 1-2 cups of the water used to cook the chicken (depending on how much room is in your saucepan). Let simmer for at least 10 minutes.

4. (Optional garlic chili oil recipe) While the broth is simmering, begin prepping the garlic chili oil if you don’t have a jar of the Huy Fong Foods garlic chili sauce already. You’ll need to sautée 1 clove of garlic, 1 1/2 tsp red chili pepper flakes, 1-2 tsp sesame oil and a splash of olive oil in a small pan. Toast garlic until brown and fragrant and add pepper flakes and sesame oil and cook until the peppers become hydrated. Remove from heat and add to blender, adding in 1 tsp fish sauce and 1 tsp of tamari. Blend until combined and set aside.

5. Once the broth has simmered for 10 minutes, add in 1/4 cup soy sauce and the garlic chili oil and simmer for a few more minutes while you bring a pot of water to boil for the ramen. Cook ramen according to package instructions.

6. Remove chicken from stock pot and shred with a fork. (It should fall off the bone easily). Add shredded chicken to broth and let simmer while noodles cook. Sometime during all this madness you’ll also want to boil 1-2 eggs for 7 minutes to a medium yolk consistency.

7. Chop green onions and cilantro for garnish and begin assembly! Add noodles to the bowl first, then pour in the chicken and vegetables, and broth to top off the bowl. Add green onions and cilantro, and peel your boiled egg and cut in half. Voila! Top with any other garnishes you want like sriracha, mushrooms, etc

And there you have it, a super simple homemade ramen recipe that just so happens to be gluten free 🍲
