Color Science: Canon vs Sony

I decided to compare my Canon 6D vs Sony A7iii and A7RII for color science purposes. I'm both surprised and not surprised by the results.
Can you see the differences?
To my eyes, the Sony A7iii vs the Canon 6D shows a marked improvement in color science and skin tones, especially compared to the old Sony A7R2.
