Brinjal Curry Ingredients:
Some Brinjal/Aubergine
Some oil
Mustard seeds - ½ teaspoon
Chana dal - 1 teaspoon
Dried red chillies - 4
Green chillies - 6
Garlic cloves - 1 handful
Shallots - 2 handfuls
Fennel seeds - ½ teaspoon
Cumin seeds - ½ teaspoon
Fenugreek seeds - ½ teaspoon
Some curry leaves
Salt - 2 teaspoons
Turmeric powder - 1 teaspoon
Curry powder - 3 teaspoons
Tomatoes - 200g
Some tamarind soaked in hot water
Some hot water
Coconut milk - 200ml
