𝗥𝗲𝗰𝗶𝗽𝗲:

Butter or Margarine: 250 grams
Dark brown sugar: 100 grams
White sugar: 125 grams

Golden syrup: 1 tablespoons
Black trycle: 1 tablespoons + 11/2 teaspoon
Browning: 1 tablespoons
Water (optional): 1/4 cups

Flour: 300 grams
Salt: 1/8 teaspoons
Nutmeg: 1 teaspoons
Mixed spice: 1 tablespoons + 11/2 teaspoons
Cinnamon: 1 teaspoons
Baking powder: 1/2 teaspoon
Eggs: 5 pieces ( 250 grams)

Mixed fruits: 150 grams
Slurry mix: 150 grams
Lemon and orange rinds: 1 teaspoon each
Mixed nuts: 100-150 grams (optional)

Flavors
Vanilla: 1 teaspoon
Strawberry: 1/2 teaspoon
Almond: 1/8 teaspoon
Rum/ brandy: 1/8cup

How to Make Slurry Mix
Drain soaked mixed fruit
Put in a food processor and add honey
Blend coarsely

Direction
Pre heat oven, line pan with parchment paper
Into a bowl, add margarine, brown sugar and white sugar. Mix between 15-20 minutes
Add in browning, golden syrup, slurry mix and black trycle. Eggs and water, mix till all ingredients are combined 5-10 minutes and Add flavors.

Sieve flour 4 times

Add all dry ingredients

Into another bowl, mix all fruits. Add in little portion of flour into it to prevent fruit from sinking.

Add dry ingredients bit by bit alternating with the fruits. Fold gently.

Pour batter into pan and bake @ 140-150 degrees for 1 hour.
