Having Sofrito made in batches ahead of time is my cheat code for having meals done quickly and absolutely deliciously! Your food will taste like you spent hours in the kitchen instead of 30 minutes or less.

Puerto Rican Sofrito (Recaito)
2 medium size onions
1 Green Bell Pepper (medium to large)
*1 small red pepper (Traditionally Aji Dulces are used but they are hard to find where I live so I substitute it for a red pepper when I don't have them. If you have access to them, I use 1 whole pack)
2 Bulbs of Garlic (I love Garlic so I used about 30 garlic cloves)
1 bunch of cilantro (corriander)
1 bunch of culantro (recao) if you can find it. If you can't find recao just use 2 bunches of cilantro instead.
Ice cube trays or a freezer safe container with a tight fitting lid.
It's super simple. Wash and rough chop your Onions, Green Pepper, Red Pepper or Ajis Dulce and toss in a food processor or blender. If you don't have a food processor or blender, you can finely dice all the ingredients, which is how my grandmother used to do it and she made hers fresh every time. Add your peeled garlic, half of the cilantro and half of the culantro. Cover and pulse it a few times to make room to be able to add the rest of the cilantro and culantro. Once you've added the other halves of the cilantro & culantro, pulse or blend lightly so you still have some texture in your sofrito (recaito). If you blend it on high you will have a smoother consistency which if that's what you prefer you can do that. Once done, fill your ice cube trays or freezer safe container and freeze. If you're using ice cube trays, once they are frozen, you can pop them out and store them in a large zip lock bag and just use a few at a time.

(UPDATE: I tried this one a few more times and each time I did, it triggered my asthma so if fragrances can trigger asthma for you, I would stay away from it. It can't be returned either)
