Conventional wisdom isn't always wise! I am cooking two briskets on my Kamado Joe Big Joe to see if fat cap up VS meat side up makes for a better Kamado Joe Brisket.

Facebook groups are notorious for repeating these Kamado rules which for over a decade I was part of repeating UNTIL one day, I started testing them. Today I am tackling the idea of placing your fat cap towards the fire (offset up / Kamado down) to see if we are sacrificing the best possible result to conform to group echo chamber talking points which are often un-tested opinions vs facts.

PLUS I am sharing for the first time my real wood smoked tallow injection hack that inches us closer again to what a brisket tastes like from my offset smoker, but all steps on my KJ.
