Food is about telling stories and connecting with people and introducing them to something completely new."

"Lots of chocolate makers buy big stainless-steel machinery, it obviously serves a purpose, and it makes chocolate, but actually we want our machines, that have made chocolate perfectly in the past, to do exactly the same for us. Talking about our roaster that's about 100 years old, it's obviously served its purpose brilliantly well and we want to continue its life."

"The stone grinder you see behind me we don't have to use, there are other ways of processing liquor, but actually we think it's the best way to do it and it looks the best. And then we've got this phenomenal machine called a three-roll refiner and you don't see them very much, we know that ours is one of only two or three in the world and it just means that we have such great control over our batches. We know that the finished product is uniform and consistent, and we love using it."

As Easter approaches, one UK-based chocolate maker is pushing for a different approach to celebrate the event.
Its Easter eggs are wrapped without plastic and the cocoa beans are sustainably sourced.
