There are many ways to open a sea urchin. You can pry it open with two spoons. You can cut it open with scissors. You can crack it open with a knife. You can use this really cool sea urchin tool from Japan ($80). In this video, I will show you how to open and clean out sea urchin using a pair of kitchen scissors. I will also show you how to convert the shell into a pretty sea urchin plate. Lastly, I will introduce you to two yummy sauces that pairs well with the uni.

Suggestions:
1. Wear gloves if you don't want to stain your hands.
2. Use an aluminum pan or plastic cutting board while handling sea urchin. It will stain your kitchen counter top, wooden cutting board, kitchen sink, or whatever you have it placed on top of. Luckily, Clorox helps remove the stains.
