Every weekend differs, but when I am not creating content this is what I make for myself. This weekend I made beet juice, mango sticky rice, eggplant Parmesan, and papaya bowls. Comment your favorite dish! :)

Beet Juice Ingredients:
3 apples
1 large beet
3-4 large carrots
1 nub of ginger

Restaurant: Thai E San located in Dallas, TX

Mango Sticky Rice Ingredients:
1 cup cup glutinous rice
1 can coconut milk or cream
2 tbsp coconut sugar or palm sugar
Pinch of salt
Mangoes
Cornstarch slurry
Toasted sesame seeds


🌱 To prepare the sticky rice, begin by soaking the rice in hot water for thirty minutes or overnight.
🌱 Wash the rice three times until the water runs clear.
🌱 Steam rice for 25 minutes or if you’re using a rice cooked skip the soaking part and cook rice in a rice cooker with 1 1/4 cup of water. (Traditionally it is steamed and a pandan leaf is added as well)
🌱 While the rice is cooking, take a separate pan and combine coconut milk, sugar, and salt over medium heat.
🌱 Once the rice is finished cooking, add 1/3 to 1/2 cup of the coconut milk mixture back to the cooked rice.
🌱 For the remaining coconut milk mixture, add a cornstarch slurry and stir until it thickens.
🌱 Finally, serve the sticky rice with mangoes, the coconut sauce, and toasted sesame seeds.

Eggplant Parmesan Ingredients:
Eggplant
Oil, for frying
Marinara
Vegan cheese
VEGAN Breadcrumbs
Italian seasoning
Garlic powder
Salt
Pepper
Nutritional Yeast

Wet Batter Ingredients:
Just Egg
Seasonings

Dry Batter:
Flour
Cajun seasoning
