This meringue-based dessert is made from egg whites, so it must be healthy, right? ;) The baked light, marshmallowy meringue is encased in a delicate, crisp shell and is topped with lightly sweetened whipped cream, a mixed berry sauce, and some fresh fruit to cut the sweetness of the pavlova. Try this Australian (or did it originate from New Zealand...?) dessert today with any fruit topping of your choice! Also great with lemon curd, chocolate, or fresh passion fruit. Yum.


RECIPE:

Pavlova:
4 egg whites
Pinch of salt
1 cup (200 grams) superfine sugar
2 teaspoons cornstarch
1 teaspoon vanilla extract
1 teaspoon white vinegar

Whipped cream:
1 cup heavy cream
1 teaspoon vanilla extract
1-2 Tablespoons sugar

Mixed berry sauce:
1 cup fresh or frozen berries
2 Tablespoons sugar
Pinch of salt
Juice from half a lemon
