Donne Biryani, a famous chicken Biryani with a unique flavour and aromatic dish from Bangalore Shivaji Military Hotel is prepared with jeeraga samba rice, basmati rice won’t give the same flavour and taste to the dish. If you do not have jeeraga samba rice, use the normal cooking rice, I highly recommend not to use basmati rice for this biryani preparation.
Red Chilly powder is not used in this recipe. The spice that is imparted to the biryani is from green chilies. If you like a bit more Spicy Donne Biryani (which is the best way to eat this biryani) add more chilies. Remember each green chilly has different spice levels. Add according to it.

Curd – 2 cups (200gms)

Ingredients for Donne Biryani:

Onions – 3 (Big size)
Lemon – 1
Tomatoes – 2 (Big size)
Fenugreek leaves – 10 bunches
Mint leaves – 2 cups
Coriander leaves – 1 big bunches (2 cups)
Green chillies – 20
Ghee - 2 tbsp
Chitti mutyalu rice (Jeera samba rice)– 1 kg (4 glasses)
Green Peas : 1 cup

Blended masala Ingredients:

Cinnamon – 1 ½ inches
Mace – 1 small flower
Kapok buds – 1 ½
Cloves – 4
Cardamom – 4
Fennel seeds – 2 tbsp
Black pepper – 1 tbsp
Bay leaf – 1
Stone flower – 2 tbsp
Blend into fine powder above Ingredients

Green paste Ingredients:

Oil - 2 tbsp
Green chillies – 20
Fenugreek leaves
Mint leaves
Coriander leaves

This Donne Biryani is best when paired with Onion Cucumber raita along with boiled eggs, Chicken roast, pepper chicken or mutton pepper roast. Ohhh heaven!!!
