Was it the crispy outer layer of fried bread crumbs; or the creamy fillings of pistachio-olive-pesto with cheese; or the accompanying satiating sweet and sour tamarind sauce? Pistachio Green Olive Pesto Ingredients:
70g pistachio
20g fresh marjarom and taragon
80g pitted green olives
1 tbsp salted capers
15g parmasan cheese
1.5 tbsp lemon juice
lemon zest of 1 lemon
6g garlic
3-4 tbsp olive oil

Note: This Pistachio Olive Pesto was an inspiration from the cookbook, Listen to Your Vegetables by Sarah Grueneberg. A delicious pesto that I had made many times and overtime, the recipe has been tweaked to suit my family's liking and adapted to the local ingredients that are more convenient to get here.

Batter Ingredients:
1 tbsp rice flour
1 tbsp corn flour
1 tbsp all-purpose flour
1 egg

Tamarind Sauce Ingredients:
15g chopped green chilli
25g minced garlic
50g finely chopped onion

0.75 tsp ground cardamom
0.5 tsp ground cumin
0.5 tsp ground coriander
0.75 tsp ground cinnamon
1 tsp ground turmeric
1 tsp sweet paprika
0.5 tsp salt
0.5 tsp ground pepper
1 tbsp sugar
1 can (400g) peeled whole tomatoes

2 tbsp olive oil or sunflower oil to saute the onion, garlic and chilli
water to dilute the sauce if it thickens too much

Stuffed Bell Peppers Ingredients:
6 mini bell peppers
55g soft goat cheese
180g pistachio-olive pesto

Other Ingredients:
sunflower oil (or oil with high smoke point) for deep-drying

Note: In this video, I have highlighted the marinated goat cheese from ‪@meredithdairy8960‬ because the product is exceptional. Furthermore, the farmers there treat their animals with love and care, and run the farm sustainably whilst protecting the native vegetation, surrounding landscape and its ecology.
