In a recent video, we traveled to the far northern Italian region of Trentino-Alto Adige, where I had a chance to try my first "canederli."

If you're not familiar, canederli are a type of dumpling made from bread and they are incredibly delicious. I've been obsessed ever since, and fascinated with this delectable concept of making "pasta" out of bread.

Well, it turns out that there are even more of these "bread pasta" dishes in Italy than I ever imagined. They are totally unique in flavor and texture, often easier to make than normal pasta, and usually overlooked by most people (including myself).
