Bora/Bodi/ or Chinese Long Beans is such a simple yet complex tasting dish. The flavors of the tomatoes cooked up with the green seasoning and onions gives the bora its own distinct flavor. I personally like to eat bora with oil roti, but it can also be eaten with sada roti or rice. It is yet another great vegetarian option made by the people of the Caribbean and Guyana. Of course if you wanted to have it with a protein, you could easily throw in some chicken or shrimp. I hope you all enjoyed this recipe and cooking in the kitchen with me again.

Ingredients and Measurements:
1 lb. Bora
oil
1 onion sliced
2 roma tomatoes sliced
1 scallion sliced
2 tbsp. green seasoning
2 hot peppers (add in as much or as little as you would like)
salt to taste
a pinch of black pepper
