What you will be needing
1 tablespoon cooking oil
1 pound kielbasa sausage cut bite size
1 1/2 cups finely diced onion
2 peeled carrots cut small
2 celery ribs cut small
1 packed tabelspoon finely chopped garlic
1 1/2 pounds yukon gold potatos cubed
1 1/2 cups frozen corn
4 cups chicken broth
1 1/2 cups heavy cream
Black pepper to your liking
Seasoning salt to your liking i use lawry’s
1 1/2 cups colby jack cheese freshly shredded plus more for garnishing in bowl
2 tablespoons chopped fresh parsley plus more for garnishing in bowl

This is a chunky potato soup if you want it a little thicker you can slightly use a potato masher and mash a few times at the end of cooking or you can add 2 tablespoons of cornstarch to 1/4 cup of water making a slurry and add it at the end of cooking cook for 2 minuets longer to thicken and enjoy!❤️
