Mutton roast is a rich and flavorful dish made with tender mutton (typically goat or sheep meat), cooked in a blend of aromatic spices. The dish features succulent pieces of meat that are marinated and slow-cooked, allowing the spices to deeply infuse the mutton. The meat is typically browned and seared first, which creates a crispy, caramelized exterior, while the inside remains juicy and tender.

Ingredients:

Mutton (bone-in or boneless): 1kg
Onion: 2 large chop
Ginger-garlic paste: 2 tbsp
Green chilies: 2 (slit)
Coriander powder: 1 tbsp
Cumin powder: 1 tsp
Red chili powder: 1 tsp (adjust to spice level)
Garam masala powder: 1 tsp
Turmeric powder: ½ tsp
Curry leaves: A handful
Cinnamon stick: 1-inch piece
Cloves: 3-4
Vegetable oil: 2 tbsp
Salt: to taste
Water: as needed
Fresh coriander leaves: for garnish
Ginger julienne for garnish

Instructions:

Marinate the Mutton:

Wash the mutton thoroughly and drain the excess water.
In a bowl, combine the mutton with turmeric powder, red chili powder, coriander powder, cumin powder, ginger garlic paste and lemon juice and salt. Mix well and set it aside for at least 30 minutes to marinate.

Cook the Mutton:
Heat oil in a large pan or pressure cooker. Add chopped onions with green chilies sauté for 5 minutes by adding turmeric and salt.
Add the marinated mutton to the pan. Stir well to coat the mutton pieces in the masala.
Cook on medium heat for 10-15 minutes, allowing the mutton to brown slightly.
Add water (about 1 to 1.5 cups, depending on how much gravy you prefer). If you're using a pressure cooker, close the lid and cook for 4-5 whistles. If you're using a regular pan, cover and cook on low heat until the mutton becomes tender (this could take 40-45 minutes).

Making of Masala Powder :
In a pan dry roast the Coriander seeds, Cumin seeds, Kaskas, Cinnamon stick, Clove Sauté for a minute until the spices release their aroma.in a mixer jar add roasted maslas with garlic pods and make a masala powder.

Final Touches:
Once the mutton is tender, check the consistency of the gravy. If it’s too watery, increase the heat and cook uncovered until it thickens to your desired consistency.
Sprinkle roasted garam masala powder and adjust salt if needed. Mix all together so that the flavors are well balance. Try to make roasted masala powder while making only.
Once you get the required consistency, Garnish with fresh coriander leaves and Ginger julienne

Serve:
Serve hot with Sambar, Rasam Rice, Naan, Roti, or Paratha.
Enjoy your mutton roast, a perfect combination of tender meat and flavorful spices.
