Here's the main differentiator between olives and olive oil: Oil is almost entirely fat, whereas whole olives contain only about 20% fat. As a result, a tablespoon of olive oil contains 120 calories, whereas a serving of olives (about 10 medium) contains only 40, (asli zaitoon ke tel ki pahchan).

Olive fruit or olive oil?

Olive oil is essentially sodium free, in comparison to olives, which must be treated or pickled in order to be edible.
Most of the polyphenols in olives are lost during the curing process, but they are largely retained in extra virgin olive oil. (Phytonutrients called polyphenols are thought to protect against harmful diseases).
Olive oil does not contain fiber; whole olives do.
Some olives undergo natural fermentation during processing, making them a source of good bacteria; olive oil does not have that.
