This is a play of me using Chain Bombs to defeat Gorimondo from Kirby and the Forgotten Land without taking any damage.

And also, funny enough, ‪@aWiibo‬ had the same idea. Guess I didn't notice. Someone's gotta put the two back to back to see who did it better.

So. Here's what I've gathered from this boss fight:
Swings arms, Throws Rocks, EXPANDS like Donkey Kong, and has nothing to do with Mondo. Although I would admit it would be super funny if the ex version of this boss had a golden pompadour.

So. How to defeat it. The way I used, was simply planting bombs and stacking up damage, but I will talk about the other way to defeat this boss if you have the ice or sword ability.

Chain Bomb allows you to stack up to 6 (YES SIX BOMBS! NOT 7! KEEP THAT IN MIND, SO YOU DON'T WASTE TIME TRYING TO GET A 7-BOMB COMBO. IT'S LITERALLY IMPOSSIBLE!)
Anyways. The more bombs you have chained together, the more damage each bomb will deal. At a catch, when bombs are chained, whenever one goes off, the others in that chain go off as well. The bombs will explode whenever you have an enemy or projectile come into contact with a bomb, ~15 seconds pass (set for each bomb), or you pull out another bomb when you already have 6 on the field, which is important to know since you can't get a 7-bomb combo and you could also use it as a C4 function. Maybe. But then again, they explode on contact and by the time you plant your 6th bomb, the 1st one is about to go off.
You can tell how many bombs you have in a chain based on the color.
Single Bombs remain black,
Combo of 2 turns red,
Combo of 3 turns yellow,
Combo of 4 turns green,
Combo of 5 turns a bright cyan
Combo of 6 turns an even brighter blue.
The way to make the most out of chain bombs is to have them close together so your opponent feels the blast from as many bombs as possible, to maximize the damage.

Other ways to defeat Gorimondo:
Abilities aside, let's focus on 2:14 where he gets angry and EXPANDS his arms
How you're going to dodge this is by crouching and then tilting the joystick a direction away from Gorimondo. While it will appear this way, Gorimondo doesn't actually steer his arm-whirlwind as sharp as it seems, his speed is faster than kirby's running speed during this attack and it covers a wide area making it hard to dodge. This will be important for when you have to defeat the boss without getting hit.
Besides that, whenever he swings his arms, in case you're too close to him, you can always press R and tilt the joystick backwards to dodge this attack, and you'll be given a parry counter, similar to BOTW, where you can inflict more damage!

Gigant Sword and Ice/Frosty Ice have invincible blocks which you can use to protect yourself against the attack, but keep in mind, the ice attacks loose mobility as a result, you can only breathe icy wind in this game, no ice dome or ice suction. Simply an icy counterpart to fire.

The Sword ability (Both regular and Gigant, and most likely Meta-Knight Sword) has a special move combo as well, I encourage you to try out when you get the chance: Here it is: (R+A, A, B, B). I found this combo to deal massive damage!
