• ½ cup Jowar (Sorghum) flour
• ½ cup Bajra (Pearl Millet) flour
• ½ cup Besan (Chickpea flour)
• ¼ cup Wheat flour
• ¼ cup Rice flour
• 1 small Onion (finely chopped)
• 2 tbsp Coriander leaves (finely chopped)
• 1 Green Chili (finely chopped)
• ½ tsp Turmeric powder
• ½ tsp Red chili powder
• ½ tsp Cumin seeds
• 1 tsp Sesame seeds
• ¼ tsp Carom seeds (Ajwain)
• Salt to taste
• Water as needed
• 2 tbsp Oil or Ghee for cooking

Step-by-Step Instructions
Step 1: Prepare the Dough
1. In a mixing bowl, combine all the flours—jowar, bajra, besan, wheat, and rice flour.
2. Add chopped onion, green chili, coriander leaves, turmeric powder, red chili powder, cumin seeds, sesame seeds, carom seeds, and salt.
3. Mix all the ingredients well and gradually add water to form a soft, pliable dough. Cover and let it rest for 10-15 minutes.
Step 2: Shaping the Thalipeeth
1. Take a small portion of the dough and roll it into a ball.
2. Place it on a greased plastic sheet or banana leaf and flatten it using your fingers to form a round, thick disc.
3. Make small holes in the thalipeeth using your fingers—this helps it cook evenly.
Step 3: Cooking the Thalipeeth
1. Heat a tawa (griddle) and grease it with a little oil or ghee.
2. Gently transfer the shaped thalipeeth onto the hot tawa.
3. Drizzle a little oil around the edges and cook on medium heat for 2-3 minutes.
4. Flip and cook the other side until golden brown and crisp.
5. Repeat the process for the remaining dough.
Step 4: Serving
• Serve hot with homemade yogurt, chutney, or pickle for a delicious and nutritious meal!
