Zha Jiang Mian is a popular Beijing noodle recipe. It's a dark thick and silky sauce made with flavorful pork belly that perfectly coats a bowl of fresh noodles! This sauce lasts for up to 2 weeks in the fridge, so you just come home, boil up some noodles, chop some raw veggies like cucumbers and carrots, and toss the noodles with a couple scoops of sauce and you have a delicious meal!

This is an update to an old recipe we posted many years, now new and improved and more traditionally Beijing-style! Judy walks you through what soybean sauces to buy, what pork to use, how to select the right noodles, and finally how to assemble the perfect bowl of Zha Jiang Noodles!
