KETO EGGNOG CHAFFLE - THE PERFECT CHRISTMAS MORNING BREAKFAST!

I like to make up a big batch of keto eggnog around the holidays and any leftover, I use to make these eggnog chaffles. A chaffle is a low carb waffle mostly made out of egg and cheese. In this recipe, I use cream cheese. The cheese provides structure to help hold the chaffle together.

These eggnog chaffles are delicious and very easy to make. And they are topped with an eggnog cream sauce too! Definitely a recipe you can make Christmas morning that your family with love - plus the kids won’t get all crack out on sugar too!

EGGNOG CHAFFLE RECIPE
Makes 3 chaffles

CHAFFLE PART:
1 egg
1 oz cream cheese
1/4 cup keto eggnog *recipe here: https://www.ketofocus.com/recipes/ket...
2 tablespoons coconut flour
2 teaspoons sweetener of choice
1/2 teaspoon baking powder
1/4 teaspoon rum extract
pinch of salt
pinch of nutmeg

EGGNOG CREAM SAUCE
1/4 cup heavy whipping cream
1/4 cup keto eggnog
2 teaspoons powdered Swerve
1/4 teaspoon rum extract
pinch of nutmeg

Preheat waffle maker to medium high heat. Whisk together all of the ingredients for the eggnog chaffle.

Pour the eggnog chaffle batter into the center of the waffle iron. Close the waffle maker and let cook for 3-5 minutes or until waffle is golden brown and set. If using a mini waffle maker, only pour in one-third the batter.

Remove chaffle from the waffle maker. For the creme anglaise, whip the whipping cream in a small bowl until it starts to foam. Add egg nog, sweetener, rum extract and nutmeg. Continue whipping until a cream consistency is formed. Pour over chaffles.
