Learn how to smoke and reverse sear tri tip for the perfect combination of smoky flavor, crispy crust, and tender, juicy beef! This method is one of the BEST ways to cook tri tip, and it's easier than you think.

In this video, we’ll walk you through everything:
✅ How to season tri tip for maximum flavor
✅ The ideal smoker temperature and setup
✅ When to pull tri tip before searing
✅ How to get a perfect crust without overcooking

Whether you’re cooking for family, hosting a backyard BBQ, or just want a restaurant-quality tri tip at home, this step-by-step guide will help you nail it every time.

Ingredients:
Tri tip steak
Steak seasoning (Salt, Pepper, Garlic)
1 stick of unsalted butter
Fresh Rosemary
Fresh Thyme
1 Shallot
1 Bulb of Garlic
Worcestershire sauce

Equipment:
Pellet grill + pellets
Grill or skillet
Brush
Small cast iron (for compound butter)
Instructions

Steps:
1. Trim fat off of the steak

2. Add some Worcestershire sauce to meat as binder

3. Season generously with SPG mixture or your choice of steak seasoning

4. Let seasoning adhere for a few minutes and preheat smoker to 250 degrees

5. Add meat to smoker with meat probe inserted into thickest part of steak to monitor internal temperature from outside smoker

6. For medium rare cook, let cook until internal temperature reaches 123-124 degrees

7. Prepare compound butter ingredients. Dice shallot and garlic cloves. Add all shallots, garlic, thyme, rosemary, and butter to small cast iron

8. Remove steak and let it rest for a couple minutes while preheating grill or skillet

9. Add cast iron with butter ingredients to grill and start melting and mixing it

10. Add tri tip to grill and let cook for about 2 minutes on high heat

11 Flip over and start dabbing butter on the charred side of steak while cooking

12. After 2 more minutes flip steak again and dab that side with butter as well

13. Once both sides of steak are seared to your liking, use tongs and flip the steak on its sides to sear those as well

14. When all sides are seared to your liking, remove the steak and let it rest. Continue to drip butter on the steak as it rests as well.

15. Rest for 15-20 minutes and then cut into it. Cut against the grain of the steak for the most tender bite. Enjoy!
