I'm going to show you how to roast carrots in the oven and how to fancy them up by using the carrot tops as a garnish. This is how you should be eating for the holidays in 2018. Perfect for Thanksgiving, Christmas or any holiday you celebrate perfect for the vegetarian in you family.

Ingredients:
1-2 Bunches of Carrots
1 Handful of Fresh Thyme
1 Head of Garlic
Olive Oil or Canola Oil
Salt & Pepper

For the Carrot Top Garnish
2 Tablespoons of Parsley, Chopped
2 Tablespoons Carrot tops
Zest of 1 lemon
1/4 Lemon, Juiced
2 Tablespoons Olive Oil
Salt and Pepper
