Dono is a light, mildly sweet Nepali snack traditionally eaten with tea. It is made using flour, ghee, and jaggery or sugar, shaped like small dumplings or balls, and cooked slowly for a soft, earthy flavor. It is especially popular in rural communities.

Ingredients

Wheat flour – 1 cup

Rice flour (optional) – 2 tablespoons

Jaggery (or sugar) – ½ cup (adjust to taste)

Ghee – 2–3 tablespoons

Cardamom powder – ½ teaspoon

Warm water – as needed

A pinch of salt

Instructions
1. Prepare the jaggery mixture

Heat ½ cup water in a pan.

Add jaggery (or sugar).

Stir until fully melted.

Once dissolved, turn off the heat and let it cool slightly.

2. Make the dough

In a bowl, mix wheat flour, rice flour, salt, and cardamom powder.

Add ghee and rub it into the flour until it resembles crumbs.

Slowly add the warm jaggery water and knead into a soft dough.
The dough should not be too sticky or too dry.

3. Shape the dono

Pinch small portions of the dough.

Shape them into small round balls or slightly flattened dumplings.

Traditional dono is often shaped like small leaf bowls or round nuggets.

4. Cook the dono

There are two common methods:

a) Steamed Dono (Traditional Method)

Place the shaped dough pieces in a steamer.

Steam for 10–12 minutes until they become firm and cooked inside.

b) Pan Cooked Dono (More common today)

Heat a pan on low flame.

Add a little ghee.

Place the dono balls in the pan and cook slowly.

Cover with a lid and let them cook on low heat for about 10–15 minutes.

Turn occasionally so all sides cook evenly and become lightly golden.

5. Serve

Serve warm with milk tea or black tea.

Optionally drizzle a little melted ghee on top for extra flavor.
