Quick video explaining some of the main differences between Salesforce profiles and Salesforce roles. In general, Profiles give you "Object & system" permissions while roles give you record level permissions.

Profiles answer the question "which objects can I access, edit, etc. while roles answer the question which records can I see, edit, etc."
