Here it is, the Bearss Lime. The Bearss Lime is probably the most popular of all limes simply because of its adaptability. It will grow anywhere – places where citrus does well, it will grow in places that are challenging for citrus, it’ll grow as a container plant and it does well as an indoor/outdoor plant. The Bearss Lime. It’s a little bit later in lime-ripening season here, and so these Bearss Limes are actually going from green to yellow, which is exactly what a Bearss Lime does. When they’re yellow, they still have that wonderful, wonderful lime green colored flesh. Actually one of the wonderful things about when a Bearss Lime turns yellow is that it kind of gets a little bit of sugar. Just that touch of sugar makes that lime flavor come out even more. So the Bearss Lime kind of has two periods: one when it’s really the true lime, and then when it gets on the yellow side when it becomes more of a lime treat that you can almost eat right off the tree.
