Hollandaise is one of the five mother sauces that we learn early in our careers as cooks. Most young cooks get put on brunch service because the more seasoned cooks want Sundays off. As a result of this you get tons of practice making hollandaise. The more you practice the better you get. It is fairly easy to make with a little bit of patience & practice.

makes about 1 pint

3 egg yolks
1/4 cup water or 59 ml
1-1 1/2 cup or 237ml unsalted butter melted and warm
juice of 1/2 a lemon
salt
