Nathalie’s Notes:

For the Haitian Base, I forgot to pick up celery so it is not in the recipe I made on screen. Also, as we don’t eat spicy, I omitted the scotch bonnet pepper.
The recipe I followed for the Hatian Base did not specify when to add the onions to the meat, so I added it as you see on screen. You could sauté the onions prior to adding the meat mixture, your guess is as good as mine. Either way, it would be delicious.
For the Fried Plantain, some soak the plantain chunks in salt water prior to frying, I did not this time.
My family enjoyed the filling of the patties so much, and I had quite a bit of Hatian base left, so I used the patty filling with taco shells. Delish!
