Stir-fry chicken with ginger - Easy Thai dish (2022) ไก่ผัดขิง GAI PHAD KHING
Stir-fry chicken with ginger is a common dish to have in Thailand. Usually you can find it in Kao-gang shops, or Thai curry shops. In Kao-gang you can find many different dishes from curry, stir-fries, deep-fried and soup. All of these dishes are already made and put in a glass box where you can see and choose what you would like to eat. You can have it as a single plate dish or sharing dish. For Thai people, we have Kao-gang for breakfast or lunch because it’s quick, easy and delicious.

Ingredients

150g Chicken cut into bite size
½ C Julienne ginger
½ C Spring onion chopped into 1.5 inches long
¼ C Cloud ear mushroom soaked and cut roughly
2 Red chilies sliced
2 Tbsp Stir-frying oil
1 Tbsp Oyster sauce
1.5 Tbsp Soy sauce
1 Tsp Sugar

Instructions

1. Set a wok or a pan over medium-high heat.

2. Add stir-frying oil. When the oil is hot, add in chicken and stir-fry until it’s 80% cooked.

3. Add garlic and stir-fry for a few minutes then add ginger, and follow by the mushroom. Stir-fry for 30 seconds.

4. To season the dish, add oyster sauce, soy sauce, and sugar. Keep stir-frying, and at this point, if the pan gets dry, you can add some water. Not too much.

5. After 1 minute, add spring onion and followed by sliced chilies. Stir-fry for another 30 seconds, then turn off the heat and serve hot with steamed Jasmine rice.
