Coconut flour (pol piti) is gluten free and grain free. It is ideal for low carb baking and rich in fiber. It has a lower glycemic index as well.
Coconut flour has now become a main and definite item in many modern diet plans.

Ingredients:
Coconut and water
Simply the only ingredient you need is coconut meat residue/ coconut pulp which is always thrown away as a kitchen waste.

Instructions:
Let’s first make Coconut meat residue.
1) Scrape out the white coconut meat. Remember not scrape out the coconut shell.
2) If you have pieces of coconut meat peel off the brown outer skin.
3) Squeeze out and extract coconut milk.
4) Use the left over coconut pulp or coconut meat residue to make coconut flour
5) Dry the coconut meat residue well until the water is fully vaporised. They are two methods.
6) 1st method – Spread the coconut meat residue evenly on a baking tray and bake for 2-3 hours in 120’C temperature until it becomes dry. This method is time consuming.
7) 2nd method – Pan dry the coconut meat residue in lowest flame while stirring continuously. When dried completely the colour of coconut meat residue will change the colour to slight beige.
8) Grind the oven dried or pan dried coconut meat residue for 3 - 4 times until a fine powder is made.
9) Tada !!!! The coconut flour is made !!!!!
10) Optional step – you can sieve the coconut flour to remove any clumps.
11) Store in air tight container for about 2-3 months or keep in refrigerator to remain it fresh for longer.
Now you can make cookies.
