Vodka Pasta With Meatballs
Ingredients
Pappardelle Pasta
Vodka Sauce
Meatballs

Vodka Sauce Recipe
Ingredients
1/4C pancetta
1/4 onion or 1/2 small onion diced
1 clove garlic diced
1t sugar
1t Italian seasoning
Red pepper flakes to taste
27oz crushed tomato
1/2C parmesan cheese
1/4C vodka
1/2- 1C cream (depends on how creamy you want it, I like it extra creamy)

Sautee pancetta and onion until onion is translucent. Add garlic, cook for 1 minute or until garlic is fragrant on medium heat. Add vodka and simmer for 10 minutes stirring frequently. Add tomato sauce, sugar, pepper flakes and Italian seasoning and simmer for another 10 minutes. Add cream and parmesan cheese, bring to a boil and then simmer for another 20-30 minutes.

Meatball Recipe - Preheat oven to 350 degrees
Ingredients
1lb ground beef
1 small onion diced
1/2t italian seasoning
1t oregano
1t crushed red pepper flakes
Pinch of sea salt
1/2C ricotta cheese
1/2C parmesan cheese
1/2C breadcrumbs
2T Worcester Sauce
dash of hot sauce to taste (I used franks hot)

Preheat oven to 400 degrees. Combine all ingredients and mix well. Form in to 4 large balls and place on baking sheet. Bake for 25 minutes or until no longer pink in the center. Turn once in the middle of baking.
