Rhubarb chutney

This is one of the easiest chutney recipes I make and literally requires placing it on the stovetop and allowing it to cook down. You can use outdoor-grown rhubarb for the recipe as the thick stalks cook down really well and have a more robust flavor.

Ingredients
1 cup sugar
1/4 cup vinegar or lemon juice
3 cups rhubarb
1 teaspoon chili powder
1 tablespoon chaat masala
1 dash crushed red pepper flakes
Method:

In a heavy medium saucepan add rhubarb, water and salt and let it cook until rhubarb is tender.
Cook on high heat until water evaporates.
combine the sugar, chili powder, chat masala, red pepper flakes, and lemon juice.
Continue cooking over medium heat until the mixture has thickened.
Blend the mixture if you want it smooth.
Transfer the rhubarb chutney to a jar or container and cool.
