Here’s a simple and authentic Thattai recipe you can try at home:

Ingredients:

Rice flour – 1 cup

Urad dal flour – 2 tbsp (roast and grind urad dal)

Chana dal – 1 tbsp (soaked for 30 minutes)

Butter – 1 tbsp (softened)

Sesame seeds – 1 tsp

Cumin seeds – 1 tsp

Asafoetida (hing) – a pinch

Red chili powder – 1 tsp

Salt – as required

Water – as needed for kneading

Oil – for deep frying


Instructions:

1. Prepare the dough:
In a large mixing bowl, combine rice flour, urad dal flour, softened butter, sesame seeds, cumin seeds, asafoetida, red chili powder, and salt. Mix everything well.


2. Add chana dal:
Drain the soaked chana dal and add it to the mixture. Gradually add water to form a soft, smooth dough. The dough should not be too sticky or too dry.


3. Shape the Thattai:
Take small portions of the dough and roll them into balls. Place each ball on a plastic sheet or banana leaf and gently press it flat using your fingers or a rolling pin. Flatten it evenly to about 2-3 mm thickness.


4. Deep fry:
Heat oil in a deep pan over medium heat. Once the oil is hot, carefully slide the flattened Thattai into the oil. Fry them in batches until they turn golden brown and crispy. Ensure that they fry evenly on both sides.


5. Drain and cool:
Remove the Thattai from the oil and place them on a paper towel to drain excess oil. Let them cool completely to become crisp.


6. Serve or store:
Once cooled, store the Thattai in an airtight container. They can be enjoyed as a crunchy snack with tea or as part of a festival spread.
