During a recent snowstorm, I decided to put my Patriot Pits 120 Gallon offset smoker to the test. This pit is all 3/8inch steel and has a partially insulated fire box. These features have faired me well in the cold of New England to this point, but honestly wasn’t too sure how it would do covered in snow and down in the 20°s .

I go over how I got the smoker going and talk a little bit of fire management while evaluating the smokers’ performance in the thick of a snow storm.

For the cook, I go over how I prep and smoke pork belly. I also throw a rack of ribs on, but didn’t focus any content on the ribs.

It was pretty awesome being out on the smoker in the snow…for a little bit. It got to be taxing going back and forth in 14 inches of snow all day, but it was worth it!
