It’s Pizza Night at Milly’s Pizza in the Pan, where I spoke with owner-operator Robert Maleski briefly about his pan pizzas, which are inspired by the late and legendary Burt Katz (Pequod’s, Burt’s Place), who’s credited with inventing this particular style of deep dish — with the cheese-frico edges reminiscent of Detroit-style pies.

As Maleski notes, he was also inspired by his grandmother Milly, who shared with him her passion for cooking and who’s the eponym for his pizzeria.

When I shot this in May 2023, his small pizzeria in Chicago’s Uptown neighborhood was his only location. He’s since opened a second, larger store in Berwyn, a Chicagoland suburb.

The pizza you see being sliced is the pie my friends @jnthnslmn and @m3ggu and I ordered — the “Craiglist”: peppadew peppers, sausage, mushrooms, red onions, toy box tomatoes, spinach, and ricotta ($30 for a 14-inch/36cm).

Maleski says his most popular, however, is the Untitled 1 (Ezzo cup-and-char pepperoni, pickled jalapeños, Glory’s tomatoes, fresh mozzarella, fresh oregano).

His pro tip for customers is to order ahead. I was lucky enough to get that tip a couple days ahead of time from Jon Carruthers, who DM’d Robert on my behalf and asked him to reserve a doughball for us. Jonathan, Meg, and I decided upon arrival on which pie to order. It was a difficult decision, but we had to do one with sausage. When in Rome, after all.

When I visited for this, Maleski was only doing 5 different specialty pizzas. He’s since expanded to seven — and seems to be rotating in different pizzas at the Berwyn location.

This was some fantastic deep dish, folks. Beautiful looking, beautiful eating. Really a special pie. I was bummed I didn’t have time for a stop on my May 2024 visit to Chicago.
