मिलागी पोडी उत्तपम बनवण्यासाठी लागणारे साहित्य
• २ कप तांदूळ
• १ कप उडीद डाळ
• १ कप पोहे
• पाणी
• १ चमचा मेथीचे दाणे
• चवीनुसार मीठ
• १/४ कप चणा डाळ
• १/४ कप उडीद डाळ
• १ चमचा जिरं
• ८~१० लसूण पाकळ्या
• कढीपत्त्याची पानं
• सुक्या लाल मिरच्या
• १ चमचा तीळ
• चवीनुसार मीठ
• तेल
• बारीक चिरलेला कांदा

Podi uttapam is another south Indian recipe. This uttapam has a special ingredient that is podi. Podi is a south Indian masala powder. These are very easy to make and taste just awesome. This can be a good variation to your regular idly, dosa or uttapam. You can try this recipe at home and drop a comment for me. Do not forget to like, share and subscribe.

Ingredients:
• 2 cups Rice
• 1 cup Urad dal
• 1 cup Poha
• Water
• 1 tsp Fenugreek seeds
• Salt to taste
• 1/4 cup Chana dal
• 1/4 up Urad dal
• 1 tsp Cumin seeds
• 8~10 Garlic cloves
• Curry leaves
• Dry red chilies
• 1 tsp Sesame seeds
• Salt to taste
• Oil
• Finely chopped Onion
• Butter

Method:
• Take rice in a bowl and add urad dal, poha.
• Mix everything well together and wash it really good at least 3-4 times.
• Add fenugreek seeds and soak them in enough water for at least 5 hours.
• Fenugreek seeds help to speed up fermentation process.
• Transfer it into a blender jar and blend into smooth paste using minimum water.
• Transfer the paste into a pot.
• Add a little water into the blender jar and blend it once.
• Transfer the water into the batter in the pot.
• Due to this the consistency of batter will be adjusted and blender jar also will be clean.
• Add salt and mix well.
• Cover and rest it in a warm place for fermentation for at least 12-14 hours.
• Heat up a pan on medium heat.
• Add chana dal, urad dal and roast it for just 2-3 minutes.
• Add cumin seeds, garlic cloves, curry leaves, dry red chilies and roast everything well together
on low to medium heat for 7-8 minutes.
• At this stage add sesame seeds and roast for just about a minute or two.
• Turn off the gas and let the masala cool down completely.
• Transfer the roasted masala into a blender jar and blend it into coarse powder.
• Podi is all ready. You can store podi in an airtight container for about a month.
• Take the fermented batter and mix well once.
• Heat up a pan on medium heat.
• Brush oil on it.
• Spread batter on the pan and while it hasn’t dried spread onion and milgai podi powder.
• You can skip onion if you don’t want.
• Add butter on it and roast well from the lower side.
• You can use oil in place of butter.
• When lower side is roasted well flip it over and roast well form other side too.
• When other side is also roasted well take it off into a dish.
• Milagi podi uttapam is all ready.
