There are many different types of Japanese tea
First, let's look at the most popular types of Japanese tea
They are sencha, gyokuro, matcha, and hojicha
Each has its own unique flavor and brewing method
In Japan, tea is consumed in many aspects of daily life
Please refer to another video to learn more about the differences between each
This video introduces the basics of how to brew Japanese tea
Since sencha is the most commonly consumed type of Japanese tea in daily life,
we will introduce how to brew sencha
If you know how to brew sencha,
you will be able to brew most Japanese teas, so this knowledge is very applicable
The method for making matcha is different from that for sencha,
so we will show you how to brew matcha in a separate video
So let's get started
Step 1: Prepare tea leaves and teapot
The first step is to prepare the teapot and tea leaves
The kyusu is a traditional Japanese teapot,
suitable for brewing most Japanese teas
For this demonstration, we will use sencha,
one of the most popular green teas in Japan
Approximately 1 teaspoon (2 grams) of tea leaves per cup
Step 2: Boil water
Next, prepare the water
The temperature of the water is important for a good cup of tea
For sencha, boil the water to about 70-80℃
If the water is too hot, the tea will taste bitter
It will also increase the astringency of the tea
Also, as we will show in another video,
a water temperature of about 60 to 70°C is suitable for high-grade tea leaves
This is because the sweetness and umami of high quality tea leaves spread easily,
and if the water temperature is too high,
the sweetness and umami of high quality tea leaves will be lost
Characteristics of high quality tea leaves are thin dried tea leaves
High-grade tea leaves are processed thin by their very nature
The earlier the leaves are plucked and the earlier the time between plucking and processing, the finer and finer
the tea leaves are likely to be processed
Conversely, easily available, mass-produced, common tea leaves are large
and coarse in shape
There is no problem with taste, but there is a difference in umami,
sweetness, and aroma when compared to high-end products
It is important to brew
each tea at the appropriate water temperature for each tea leaf
Allow the water to cool slightly after boiling if necessary
Step 3: Brewing the tea
Pour hot water into the teapot and let it steep for about 1 minute
This will loosen the tea leaves and gently spread the flavor
The recommended brewing time varies
depending on the type of tea leaves, so adjust accordingly
The longest one is about 2 minutes
Any longer than that and the tea will become more astringent and bitter
Also, once the tea has been put into the kyusu, be sure to let it all drain out
If you pour more tea leaves into the kyusu while the water is still hot
and the tea leaves are still soaking in the water,
the tea leaves will soak in the water for a long time,
which will increase astringency, bitterness, and other unpleasant tastes
In addition, do not open the lid of the kyusu while the tea leaves are steeping
Do not open the lid of the kyusu while the tea leaves are steeping, as the aroma will escape
and the water temperature will drop
To facilitate steeping, gently shake the lid of the kyusu in a circular motion to the side
while holding the lid closed from above
If you have difficulty in steeping, you can use this method
Also, by gently shaking, you can diffuse
the unevenness of the tea's ingredients
Step 4: Pour and enjoy the aroma and color
Pour the tea slowly into the cup, enjoying the aroma and color
Japanese tea is best savored in small quantities
Also, if you are pouring tea into multiple cups,
pour small amounts into multiple cups and add more
