Rava Kesari Recipe

Ingredients:
½ cup ghee
1 cup Sooji Rava (semolina)
4 cups water
1½ cups sugar
2 cardamom (elachi) pods
Cashews and raisins

Instructions:

1. Heat Ghee:In a pan, heat ½ cup of ghee. Add cashews and raisins, fry them until golden brown, and set them aside.

2. Roast Rava:In the same pan, add 1 cup of Sooji Rava and roast it on a low flame until it turns light brown and aromatic. Stir continuously to avoid burning.

3. Boil Water:In another pot, boil 4 cups of water.

4. Combine Water and Rava:Slowly pour the boiled water into the roasted rava while stirring continuously to prevent lumps.

5. Cook the Rava:Stir until the rava absorbs the water and reaches a smooth consistency.

6. Add Sugar:Add 1½ cups of sugar and mix well. Stir continuously until the sugar dissolves completely and the mixture thickens.

7. Add Cardamom & Nuts:Crush the cardamom pods and add them along with the fried cashews and raisins. Mix well.

8. Finish:Turn off the flame, let it sit for a couple of minutes, and serve warm.
