Crispy Pork Lechon Belly Roll | Christmas and New Year Recipe

🎄 INGREDIENTS: 🎄
2.1kg boneless pork belly (cleaned and pat dry)
2 tbsp rock salt
½ tbsp black pepper
½ tbsp garlic powder
1 bulb garlic chopped
1 large size onion sliced
sliced onion sprout
some soy sauce and oil (for brushing the skin)
Kitchen twine for tying
🎄 Steps: 🎄
1. Make sure to clean and pat dry the pork belly,
2. Place the boneless pork belly skin side down on a tray or flat surface.
3. Use a knife to score the meat about ½ inch deep.
4. Remove any silverskin since this is very tough, chewy,
and does not melt during cooking.
5. Season and massage with rock salt, black pepper, garlic powder, and fresh chopped garlic
6. Add sliced onions, sliced onion sprout, sliced lemongrass, and pounded lemongrass stalks.
7. Roll the pork belly and tie using kitchen twine.
8. Brush the skin with soy sauce and oil.
9. Prepare the water bath by putting all the extra stuffing in a baking dish or deep pan with water.
10.Place the water bath in a preheated oven at 180 °C.
11. Roast the rolled pork belly in a preheated oven at 180 °C for 3 hours. (On the top of the water bath).
12. After 2 hrs. of roasting, increase the temperature to 200 °C
then apply some oil every 15 mins.
13. After 3 hrs of roasting, remove from the oven and let it rest for 10-15 mins before slicing.
14. Ready to serve!
