Stir-Fried Chicken Noodles

Ingredients:

2 chicken breasts, cut into small pieces

4 tbsp dark soy sauce (divided)

3 tbsp sriracha (divided)

1 tbsp sugar

2 tbsp light soy sauce

2 tbsp sesame oil

1/2 red pepper, sliced

Handful of green beans, trimmed

125g medium egg noodles

Sesame seeds for garnish

Instructions:

Prepare the Chicken:

In a bowl, mix the chicken pieces with 2 tbsp of dark soy sauce and 1 tbsp of sriracha. Ensure the chicken is well-coated.

Heat a large pan or wok over medium-high heat. Add the seasoned chicken and fry for around 5 minutes until the chicken is cooked through.

Add Vegetables:

Add the red pepper slices and green beans to the pan. Stir-fry for about 3 minutes until the vegetables are tender but still crisp.

Cook Noodles:

While the chicken and vegetables are cooking, prepare the egg noodles according to the package instructions. Drain and set aside.

Make the Sauce:

In a small bowl, combine the remaining 2 tbsp dark soy sauce, 2 tbsp light soy sauce, 2 tbsp sesame oil, 2 tbsp sriracha, and 1 tbsp sugar. Mix well until the sugar is dissolved.

Combine and Serve:

Add the cooked noodles to the pan with the chicken and vegetables. Pour the sauce over the noodles and mix everything well while still frying for about 2 minutes until everything is well-coated and heated through.

Sprinkle with sesame seeds before serving.

Tips and Tricks:

Marinate Longer: For a more intense flavor, marinate the chicken for 30 minutes or longer.

Vegetable Variations: Feel free to use other vegetables such as broccoli, snap peas, or carrots based on your preference or what's available.

Noodle Choice: If you don't have medium egg noodles, you can use rice noodles, soba, or even spaghetti in a pinch.
