Winter is the perfect season to enjoy hot soups. So today I am sharing with you all a very easy, tasty and quick to make recipe which is of "Veg Manchow soup". FULL RECIPE:
Ingredients
Onion- 3 tbsp, chopped
Green chili- 2 medium, chopped
Ginger- 2 tbsp, grated
Garlic- 1 tbsp, minced
Capsicum- 2 tbsp, chopped
Carrot- 2 tbsp, chopped
Cabbage-3 tbsp, chopped
Coriander stem- 1 tbsp, chopped
Salt- 1 tsp
Ground black pepper- 1 tsp
Soy sauce- 3 tbsp
Hot sauce- 1 tbsp
Vinegar- 1 tsp
Tomato ketchup - 1 tbsp
Water- 3 cups
Cooking oil- 2 tbsp
Hakka noodles- 1 cake
Cornflour- 1 tbsp, to coat the noodles
Oil to fry
For Slurry
Cornflour- 1 tbsp
Water- 1/4 cup
For serving
Fresh green coriander (cilantro)
Spring onions- 2 tbsp, chopped
Boil noodles for 3-4 mins. Drain and coat them with cornflour. Heat oil and fry the noodles on medium to high flame until golden and crispy. Keep them aside. Take a pan or wok and heat oil. Add ginger, garlic and green chili and sauté for a minute. Put all the veggies and fry for 2-3 minutes. Add salt, black pepper powder and all the sauces and stir well. Add water and bring it to boil. Prepare slurry by mixing cornflour and water until no lumps are there. Add slurry to soup pan and mix well. Keep stirring on high flame until soup has shiny glaze and is a little thick. Lastly put some chopped green coriander and chopped spring onions. Serve hot with some fried noodles on top. Enjoy!!
