Ingredients:
• Thick-cut pork chops (2-inch porterhouse-style)
• BBQ Bob's Chipotle Garlic Butter Seasoning
• Heath Riles BBQ Peach Rub
• BBQ Bob's Peaches & Brown Sugar BBQ Sauce
• Chipotle peppers in adobo
• Cilantro lime crema
• Fresh cilantro (optional, for garnish)

Directions:
1. Season the pork chops generously with BBQ Bob’s Chipotle Garlic Butter seasoning, then follow with Heath Riles BBQ Peach Rub, making sure to coat all sides, including the edges.
2. Roll the chops through any leftover seasoning on the cutting board to pick up extra flavor.
3. Set up a Weber Kettle 22" grill for two-zone cooking, placing hot coals on one side and leaving the other side cooler for indirect heat.
4. Place the chops over direct heat and sear for about 1½ to 2 minutes per side to develop a crust.
5. Move the chops to the cooler side of the grill and cook until they reach an internal temperature of 138°F, allowing carryover heat to bring them up to 145°F.
6. While the chops are cooking, blend 1 bottle of BBQ Bob’s Peaches & Brown Sugar BBQ Sauce, 1 chipotle pepper in adobo, and a splash of water until smooth to make the glaze.
7. Brush the glaze onto the chops during the final minutes of cooking and let it set over indirect heat with the lid closed.
8. Remove the chops from the grill and plate them with a drizzle of cilantro lime crema for a bright, cool finish.
